Basic Pastry Skills Series: Chef
Sara Polczynski
Take
these courses as a series or individually.
Create
creamy custards and rich mousses and learn the basics of plate presentation.
Experience
the world of cookies, from piped to drop to twice baked. Learn about, make and taste the world of
possibilities.
Use a variety of dough and fillings to create
wonderful masterpieces. Learn to make
chocolate, caramel and fruit sauces to complement your creations.
Learn to assemble and decorate a cake like a
pro using true buttercream and chocolate ganache. Become familiar with pastry tips and other tools that will turn
any cake into a work of art.
A single course is $125 and includes a SDCI apron.
Take the
four course series which includes an apron and Chef’s coat, all for $450.
About the
Instructor:
Sara Polczynski, Chef
Instructor, is a graduate of the California Culinary Academy in San Francisco.
Polczynski has trained at the Manele Bay Hotel in Lanaii, Hawaii and at the 5
Star 5 Diamond Broadmoor Hotel in Colorado Springs where she learned a variety
of pastry and hot food skills. In 1997, Polczynski returned to her native San
Diego where she was hired as the Executive Pastry Chef of The Cohn Restaurant
Group, which includes Blue Point, The Prado, and Dakota Grill & Spirits.
